A credit sale adds to the customer's balance as it is rung up, and a payment takes it off. The number is built from the entries rather than totalled at the end of the month, so it is right on any afternoon somebody asks.

Yes. A sale can go out against the customer rather than against cash, and the amount is posted to that party's balance as a credit sale with the bill number on it. Nothing extra to do at the end of the day.
No, and it is worth being clear about that. You can record a credit limit against a customer and you can see the running balance while you serve them, but the till will not block a sale that takes them over it. Whether to give more is still your decision at the counter, which is usually how these relationships work anyway.
Yes, on one screen, sorted by who owes the most, with the total the shop is owed across all of them. You can also open any single party and read their entries.
Record it against the party and the balance moves in the same write. Part payments are normal, so paying Rs 5,000 off a Rs 54,200 balance leaves Rs 49,200 and the entry stays on the ledger showing what was paid and when.
You can write a due off, and the write-off stays on the ledger as its own entry rather than quietly disappearing. The balance comes down and you keep the record of why, which is the part a torn-out register page never gives you.
